This dish is a hit with my husband. I add a flat can of green chili peppers and always hope to have some left for a snack later. Reheats well in microwave. I serve with salsa for topping, a fruit salad, English muffins and jelly for a great meal for family or overnight guests.

I think the time is right to include this recipe on the blog.
6 eggs, slightly beaten
6 slices bread, cubed
1 cup Velveeta or sharp cheddar
2 cups milk
1 teaspoon salt
pepper to taste
1 pound sausage, fried, crumbled and greased drained
Mix all together; pour into a 13 x 9-inch dish; refrigerate overnight. Bake at 350 degrees F for 45 minutes to 1 hour.
